Upon cutting, onions release an enzyme called lachrymatory-factor synthase.
This enzyme transforms sulfoxides present in the onion into sulfenic acid.
Sulfenic acid gets spontaneously rearranged into propanethial-S-oxide
Which through the air, goes into your eye and irritates your 'lachrymal glands.
